Since there are 2 pints in a quart, I would imagine you could half one of the standard one quart recipes. Also half the instructions/additional ingredients needed.
FYI... the best way to half an egg if needed is to break the yolk, mix it up in a measuring glass and then separate it.
I can't think of any reason you couldn't half one of the mason jar cookie recipes on my site but let me know how it turns out anyway!
